I've installed several pieces of software via GPO's. I created a folder on Server 3 with all the MSI’s. Now I need to move that folder to Server 2. I’d like to edit the GPO so the source is pointing to the correct share on server 2 instead of server 3. How can I do this without removing and reading the Policies for each piece software? I’d like to avoid mass reinstalls if at all possible.

There's no easy way to do this. The problem is that the path is embedded in
the .aas script as well as in AD. Changing the AD side is easy but changing
the .aas script isn't. You could try going into the .aas script with
something like notepad and changing the path, which is right at the end of
the file. I'm not sure this would work as expected since its a binary file,
but you could give it a go in a test environment.
