Software Installation via Group Policy

I would like to be able to see how many workstations have installed a piece
of software via Group Policy. Does anyone know of a way to do this?

No, this is not listed in AD. You have to search the the computers for that.

I would like to be able to see how many workstations have installed a piece

Software Installation in GP is rather limited here. There's nothing like
a Software Deployment lifecycle so you'll basically have to rely on
other technologies to build an inventory of the software installed.

Good candidates are WMI and a script that runs on the clients and
generates a list on a server share that gets updated from time to time.
OR third party products that are capable of doing that.
