The name you see in the To field is, as I said, controlled by the DIsplay As
field of the Contact record. However, if you don't have a contact record
for the person, then Outlook will Display As field for the message itself
from the recipient data. If, for example, you address a new message to
Brian Tillman (e-mail address removed)
Then Outlook will display
'Brian Tillman'
as the To field in the Sent Items folder. If you enter just an address,
Outlook will display just that address. If you reply to a message sent from
an address with no "personal name". only a bare address like
(e-mail address removed), then Outlook will reply with a display name of
'(e-mail address removed)' (i.e., with the apostrophes) in the To field.
Finally, if you reply to a message from someone who does use a "personal
name" (the contents of the "Your Name" field of the Outlook account you use
is an example), then Outlook will show that personal name enclosed in
apostrophes, just like the example above.
You can change any of these display names to suit yourself, however. Select
a message in the Sent Items folder and open it. Double-click the To name
and you should get an "E-mail Properties" dialogue. Change the "Display
Name" field to be what you'd like it to be, click OK, then close the
message. When asked if you want to save the changes, click Yes.
