Signatures

I have upgraded from outlook 2000 to 2002. I created a
signature which appears everytime I begin a new message.
That's ok. What I used to be able to do in 2000 was
insert my signature on replies or forwards under the
insert tab. Now I see I can add my signature
automatically for replies and forwards, however I don't
always need it. How do I insert my signature as with the
previous version?
 
Tools-> Options-> tab Mail Format. At the bottom you can set defaults
