You can use the month view. You can also select more days by holding the
CTRL key and then click on the days in the Calendar you want to see.
To change the Outlook Today property go to the following registry key
[HKEY_CURRENT_USER\Software\Microsoft\Office\<Outlook
version>\Outlook\Today]
And change the value for "CalDays"
