These entries are all shortcuts in:
C:\Documents and Settings\All Users\Start Menu\Programs
OR:
C:\Documents and Settings\username\Start Menu\Programs
where username is the name given to your account. (In my case it is Trevor.)

Open these folders in Windows Explorer. All these entries should have an
arrow on the bottom left hand corner (although this can be suppressed). If
in doubt, look at the type - it should read "Shortcut"

You can delete shortcuts from these folders without deleting the progams
themselves.

Another way to make it shorter is create subfolders and group similar types
of progams in the same folder.

I would strongly recommend against just deleting shortcuts, willy-nilly. The second suggestion:

is a much safer solution. Create new folders (eg: "Games", "Main Programs", "Old Programs", etc.) and put the shortcuts in those.

However, make sure to put the shortcuts/folders for a program back in the main Programs folder before doing any setup on it
(modify/repair/uninstall/etc.) or else it won't be able to locate them and make any necessary changes.

Of course there's always the most obvious method, activate "Personalized Menus":

Control Panel->Taskbar and Start Menu->Start Menu tab->Customize->Use Personalized Menus->Apply

This way, Windows will hide items that aren't used much (they're still accessible if needed) and show only the ones that you use
often.
