Hi there,was wondering if anyone knows how best to set a network up so
everything is running off the Server pc, ive included something ive made to
show the specs etc

It depends on what your needs are.
The basic, most versatile would be this:

If you don't want/need the server connected to the 'net you might
install a second NIC in each client and connect server to those second
NICs, not to router.
If you want the server to be a firewall too, you might want only the
server connected to the router.
If you want the server functional as an internet server but your
router is very old or simple and doesn't feature port forwarding,
you'd want the server connected to the cable modem, the router
connected to the server's second NIC, and the clients connected to the
router. This is the worst config IMHO, in the unlikely event that you
have such a limited-function router it'd be better to buy any new
router instead of having the server connected to the cable modem.
