setting the correct date

When trying to set a new appointment and or secheduling a meeting, the
system will not allow it to show on the date requested, but always puts the
request on the current day (today)
Example.. want meeting set for May 15th.. so I right click on that date,
choose new appointment, and todays date (may 2nd) shows for set time ..
no matter how i create, everything goes back to the current day.. not the
date requested.
any thoughts on how to fix?

What version of Outlook and have you installed all of the relevant service
packs for your Office version?
