Can someone please advise me on how to disable terminal services?

I'm concedrned about an employee of my company "tinkering" with servers out
of hours.

Also what are the implications / pitfalls of changing the administrator
password on w2k & nt servers?

Under Administrative Tools open Services and then open the properties of
Terminal Services and set it to disabled. If you're concerned with
unauthorized use of the administrator account then there's no reason not to
change the administrator password. Just be sure that whoever needs the new
password knows what it is.

If you do need Terminal Services, you can restrict the login hours for that
employee, disable logon to terminal server, place him/her into more
restrictive group etc. Rename Admin account. Otherwise you can uninstall TS
as Windows component from Add/RemovePrograms.
