sent Items

Hard to say at this level of detail. Outlook doesn't delete messages on its
own. Do you perhaps have AutoArchive enabled?
Tools-> Options...-> tab Other-> button AutoArchive...
 
my sent items folder is only keeping sent email for a week, how can I change
that so that its longer than a week?.
