Obviously different version of a program have different features. You
never mentioned what version of Outlook that you are using.
In Outlook 2002, use the Accounts toolbar button to select a different
e-mail account when sending a message than the default e-mail account.
In Outlook 2000, I think it was a Send Using menu. Don't know about
other versions. All new e-mails or forwards of e-mails will use your
default e-mail account because, well, it's the default - unless YOU
choose otherwise. Replies, by default, will use whatever account
through which they were received - unless YOU choose otherwise.
The other choice in case whatever version of Outlook you use has no such
user selectable means to change the account used when sending a new
e-mail, forward, or reply, but which is much more intrusive is to define
multiple mail profiles (Mail applet in Control Panel) in which one
profile has one account and a different mail program has the other
e-mail account, and do NOT enable the choice of a default mail profile
since you want Outlook to prompt you on startup as to which mail profile
you want to use.
