We have recently moved our Exchange databases to a new Server. This server
has a new name. One individual is having problems when starting outlook.
It is requesting data from the old Server. I re-created his profile from
the Mail icon in the Control panel to point to the correct Server. He is
sending and recieving email just fine, but he is still getting the message
when starting outlook that it is requesting data from the old server, which
it never completes. Any suggestions?

Did you delete the old mail profile and create a new one from scratch, or
modify the old one? The former should correct this problem.

I deleted the old profile, then created a new one. The new profile has the
appropriate server listed. When choosing the server and the username
everything is underlined when checking for the user's name. This indicates
to me that the correct server is being contacted, however something is still
trying to access the old server.

Did you properly remove the old server, or just turn it off?
This is more of an Exchange question than an outlook one - try posting in
microsoft.public.exchange.admin for more help.
