Send meeting notices to Outlool 2000 users shows up as jibberish

I have Outlook 2002. When I send meeting notices to folks
with Outlook 2000, the meeting notice comes across as
jibberish rather than adding the meeting to their
calendar. How is this fixed?
 
Omit the reminder when sending meeting notices to Outlook 2000.
