Send items to different folders

When replying to an email the sent mail goes to the sent items folder. What
I'd like to do is have the ability to have the item go to a different
folder.
Scenario: Bob sends me an email with a question. I reply to Bob. I then
move Bob's original email to a personal folder called Bob. I want the reply
to also go there so I don't have to hunt for it when Bob states that he
never received it. I'm trying to see if there is a way to do a popup asking
what folder I want the sent item to go to. Thanks!

You can set a rule which moves a copy to another folder. Note tha it moves a
COPY so it is also stored in your Sent Items folder.

I am trying to move my emails that I send to be stored in the sent folder on my server vs. the sent items folder in my personal folder. I went through rules as you suggested but it will only let me generate a rule to the inbox. I try to click on my sent items folder to create a rule to move a copy of every email sent to the "sent" folder on the server, but the default is "inbox" and I can't change it. Can you help me?
