when you do a search for files or folders containing specific text, is there any way of having the specified text highlighted when you open the files that the search returned

Not unless that file has a bookmark assigned to that text with an Auto run
macro that goes to that bookmark. Why are you asking? If you are looking
for a way to do a batch "find and replace", check out the following article:

No, but you can use Find to find it quickly. Once you've used Find once, you
can close the dialog and use the browse arrows at the bottom of the vertical
scroll bar to repeat the Find in other docs.
