When using "My Picture Slideshow" for a screen saver, how can I get the pics
to display in order as they are numbered in the "My Pictures" folder? I've
been to the settings tab, but there isn't a setting to do this.

How do they display now? Just a random selection? That may be the only
way it works. Have you tried to number them 01,02, etc.?
 
The images display in random order, that's just the way it works. Nothing
you can do unless maybe some 3rd party screen saver has the option.

If you want to view them in order, open the folder, under Picture Tasks,
click View as a slide show.

You can view your pictures as a slide show in any My Pictures subfolder or
any folder customized as a pictures folder.
