Here is an article that discusses the Out of Office Assistant,

also follow these steps and this should work for what you are trying to do:
1. Open Outlook and go to the Out of Office Assistant.
2. Click on Add Rule.
3. Select Reply with and then click on Template.
4. In the body of the e-mail message that appears create the message that
you would like the people to recieve. (Do not fill out the TO or CC lines.)
5. Click on File and Save, then close the message by clicking the X.
6. On the Edit Rule screen Click on Advanced.
7. Select the From and To boxes under Received and select the desired dates
and Click OK.
8. On the Edit Rule screen Click OK.
9. On the Out of Office Assistant screen select I am currently Out of the
Office and clear the "AutoReply only once to each sender with the following
text:" box.
10. Click OK.
This does not exactly do what you are wanting to but it is the only way I
have found to get close to what you are looking for as there is no way to
automatically turn the Out of Office Assistant on or off. I hope this helps.
