I am not able to book or view appointments/meetings in Outlook that are more
than 2 months ahead. The calendar view comes up with grey stripes and no
information. Is that a default in Outlook? and is it possible to extend it.

You will need to publish more than 2 months of free/busy information. 2
months is the default. Go to Tools->Options->Calendar Options in Outlook
and set your free/busy to 12 months.
