I've been asked to scan some old family snaps that will then be shown on
a digital projector. The audience of about 75 will be looking at an 8'
x 9' screen. How much resolution do these scans require for that size
screen? Any and all help appreciated.

Depends on the resolution of your projector.

A lot of digital projectors will do 1024 x 768 pixels.

So scan to produce a 1024 x 768 pixel image.

A 4 x 6 print scanned at 200 DPI will produce a 1200 x 800 pixel image.

If you use something such as Irfanview as your display software, Irfanview
will automatically resize the image to fit the screen size. (if you set the
display properties to fit the screen).

Get the plugin also.

We set our images to import to PowerPoint at 10xX at 100ppi and this
works fine with a 1078x760 projector. These are medical images and
enough detail is maintained to keep the audience happy. In PowerPoint
you can fine adjust the size, this depends on the projection app, some
require specific sizes.
I do scan the images at 1200ppi (35 slide so 1x1.5 @1200ppi) this is a
little large, but the images are sharper, even resized, than at an
800ppi scan. So test your scanner where it works best. For prints I
use 200ppi and resize from there (unless the image is very small).
