It is a bit of a project, but you can scan to a PDF file.
Adobe Elements 2 can open PDF files as photo files, which
you can edit using the text tools. Then save the file again
as a PDF and send it.
Or spend about $600 for Adobe's full Acrobat program.

| This is normal when scanning a document to a word
processor. A scanner can
| create an image of the original document, period. A second
step can be
| applied - translating the image to editable text using OCR
aka "optical
| character recognition." The quality of these results can
vary as some OCR
| packages are better than others. Since the text is
editable, you can go on
| from the initial results -- matching fonts, arranging
layout, editing text,
| etc -- within the word processor program.
|
| If you need an exact copy of the document, just do a plain
scan and skip
| the OCR process.
