Is there some way to set the default for saving a subweb so that it
automatically defaults to "Don't Save" the embedded files, instead of "Save"?
We save all our graphic files in the main web so that we do not have
duplicate files of the same thing throughout the web. But every time we save
in a subweb we have to change all the image files to "Don't Save" and
sometimes we forget and then the sames files are saved inthe subweb and it
takes a really long time to switch them back.

Any suggestions?

No - since the subweb is a stand alone web it will always prompt to save embedded files
- what you can try when it does is to change the folder location and browsing 1 level up to your root web image files
