If I start to create a meeting request and find that I need to get more
information and want to save the appointment so I can go back to it later to
finish and send how can I save it so I don't have to start all over again.
IF I save it to drafts it turns into an icon and then I'm not able to send.
If I cancel and save it goes to my calendar and doesn't show any information
it just stays there, but if I do that I would have to keep track of the date
that I was saving it to. Is there a way to save it without it going to
drafts and not going to my calendar?

Try File | Copy to Folder, and select Drafts as the folder. You'll get a
blank mail message with the appointment as an attachment -- you can
double-click the attachment to bring up the original meeting request form,
finish it and then send it. Then you can delete the draft message.
