i curerently have a system running 2X 80 GB (7200rpm - 8 M cache) ide drive
on a raid 0 array - they benchmark at about 90 MB/s

how much faster would 2x 80 GB (7200rpm) SATA drives be

No faster, relatively speaking (with same but SATA version
of your drives).

SATA has little to no bearing on performance, it's the
drives themselves that would be faster (or slower) in order
to make a difference.

However, your benchmarks are inconclusive, your drives are
not sustaining 90MB/s. For an accurate comparison you'd
need more thorough benchmarks.
