I hope this is appropiate.
Am ordering 2 WD Raptor SATA hd.
Plan to connect them in a Raid 0.
Do I install an OS on each one?
Appreciate general input as to them?

If your running it Raid 0 then the OS will see it as 1 big drive.

The OS, and everything else, is sprayed across both disks in rAID0
(striping). You get a marginal speedup .. the downside is if a disk goes
bad you lose twice as much data, and disks go bad twice as often
(because there are two of them). I personally wouldn't touch it with a
bargepole, except for low value 'here today, gone tomorrow' video files
or suchlike, where the speed is a benefit.

To install XP on a SATA disk at all, and certainly on a rAID0 set, you
will need to laod the drivers from floppy disk (using F6) at the
appropriate point in the installation - XP has, afaik, no native support
for SATA.
