both 2000 and 2002 offered pro versions. the only difference between pro and
non-pro was a few more aircraft (which could be downloaded to the non-pro)
and 2002pro had a flight instructor setup. I have 2000, 2002, 2002 pro, and
2004. I really only use 2004 now. It is excellent and more enjoyable than
the 2002 series.
as far as rudder pedals check out
www.chproducts.com for controllers. I have
the usb yoke (enjoy immensely) and I just ordered the pedals the other day.
there are cheaper sites to buy the CH products from but the CH website gives
you the technical data. I bought my pedals off BestBuy due to having account
there.

www.flightsim.com for add-ons and info. I paid
for a first class membership at
www.flightsim.com and have never regretted
it.
