Roaming profiles doesn't remember settings

i have moved the profiles of all users on a network (5 users on windows
XP) to a windows 2003 server, making all profiles roaming.
After this was done some settings are not kept, like default printer or
some outlook settings like mail signature.
What do i do to make this work?

Apply all 2003 and XP service packs, reboot, check for Firewall software
other than Windows XP firewall, Check for Anvivirus software doing more
than just AV scans (some include anti-spyware, firewalls, etc...), check
the event log when they logout and login...

If it comes down to it - disjoin the winxp from the domain and rejoin
it.
