Rip and Burn files

I need to clean my hard drive out. I have forgotten how to do it.
Also the last time I did this, I was forced to do complete clean of hard
drive and
files did not come up on cd.
I need someone's assistance in best way to ensure I can save my e-mails and
other documents where I do not have to worry about ever loosing the info,
even if clean sweep again is needed.
