I understand, I think, that with Windows XP I can copy files to a disc, that
I can erase the whole disc and then recopy files, but that I can't edit a
particular file and save it to the same disc without changing its name. I
have heard there are programs that will allow me to rewrite individual files
to a disc. What is the best one for my purpose (all I do is word
processing)? As far as I know I don't need anything but a program that will
allow me to save backup files on to a disc and then keep them up to date by
saving them again after I have edited them on my hard drive.

You need a program that can perform what's known as "packet writing." Two
that I know of, InCD from the complete Nero package or Roxio's software
(called Drag-to-Disc in version 6), will do the job.
