i may have already asked this, but here goes again, is there any way to
retrieve data that has been erased by defender?

If it was saved to Quarantine, yes. If it was deleted, it is possible in
theory that an undelete tool might work, but I've seen no success posts.

should be able to show you whether recovery is possible before you lay out
