Restore Windows 2000 Server To New Mass Controller

I have 3 Hp LC2000 Server that have to be replaced with 3 new HP Proliant ML530 Server. All are running windows 2000 domains. Whats the easiest way to do a backup from old server and restore to new server.Cannot use ghost with Ide Drive .
My main concern is to RESTORE TO NEW RAID CONTROLLER on the new servers.

Anyone done this before.Please Help.
 
- Why can't you use Ghost?
- What sort of a RAID array do you have - hardware or software?
