A lot of our users have editor permissions over resource calendars.
If a user creates an appointment in a resource calendar by double clicking
directly in the calendar (instead of inviting the room as an attendee to a
meeting request), is there any way to see WHO created the appointment? At
the moment, if you go to scheduling, it shows the name of the resource as
being the organizer.

They are opening the resource calendar as a shared calendar through their own
profiles.
They have all either got admin permissions set on AD, or owner/editor
permissions set on the mailbox. Same problem either way.

No.
Are they logging into the mailbox directly or opening it in their profile?
What permissions do they have?
