Outlook doesn't have a "birthday calendar". Hotmail/Windows Live does. Log
into your Hotmail/Windows Live account and fix it there. If you need help,

As far as I am aware, the birthday calendar comes from Windows Live.
In Windows Live, you can get the deleted birthday calendar back by clicking on the arrow next to New in the menu immediately above the calendar. When the Birthday Calendar does exist, one of the items on the New list is "Birthday". When the Birthday Calendar does not exist, then "Birthday" is replaced by "Birthday Calendar". Click on "Birthday Calendar" and your Birthday Calendar will be back.
If birthdays are still not showing after you do this, then click on "Birthday calendar" in the left margin and then click the "Refresh now" text.
