Removing/Adding paper sizes

We have a couple large plotters on our network that are
used to print C and D size drawings. Because they are not
set as the default printer on the local workstations,
they revert to 8.5 x 11. Can I edit the printer drivers
to eliminate all the paper sizes except for C&D?

No, The driver will display any paper sizes that will fit onto the printer
surface.
