How does a VPN connection differ from a straight Remote Desktop connection,
is it just a connection technique, or something more mysterious?

VPN is like being connected on a network .. remote connection you actually
control the computer.

A VPN will allow your computer to be almost a fully fledged LAN member
remotely (by almost I mean that name resolution can be a bit of a
hassle over a VPN link).

Remote Desktop gives you access to everything.
