Is it possible to set up a Windows 2000 Professional
workstation so that it can be accessed via a Windows XP
Professional workstation's Remote Desktop? If so, what is
the procedure for prepping the Windows 2000 workstation?

No, it's not possible to have 2000 Pro host terminal services sessions. The only "built in" method you could use is Microsoft NetMeeting
