Please tell me there is a way to rename the subject of received emails (for
archiving purposes)

You could create a folder with your chosen subject title and move the
e-mails to the designated folders.

Hoping for ability to rename individual emails - something I had for years
in Eudora and it is so handy I'm surprised (and disappointed) that all email
apps do not have it

It is impossible from within Windows Mail.

But... you can do it outside of Windows Mail. Here are instructions:

1. Drag message to Desktop.
2. Open Notepad or any other text editor. Drag file into Notepad.
3. Find line that starts with "Subject: " Change it with new subject. Make
sure that you don't loose "Subject: " and don't put subject on multiple
lines.
4. Save the file.
5. (Optional) Double click on the file to see if it Windows Mail displays as
expected.
6. Drag that message back into Windows Mail and delete the original message
and the file on Desktop.

You can also use right click and "Open With" option. Just make sure that
you open file with a text editor.
