File and printer sharing is for sharing files across a network, not on your
local machine. Disabling it shouldn't have any effect on your local files and
folders. However, if you have a network, or want to share certain files and
folders thru the internet, then all you need to do is:
1) Open network connections from control panel, and right click your local LAN
connection>properties
2) If you see file and printer sharing, then you already have it installed. If
you do not see it there, click install>clients>file and printer sharing>ok.
You'll also need to install>clients>client for microsoft networks>ok.
3) You should see them in your network connections properties with a check mark,
just ok your way out.
4) To adjust the bindings, in network connections, click advanced>advanced
settings from the menubar in the explorer window, look for your connection and
make sure the checkmark is there for both client for microsoft windows and file
and printer sharing to tcp/ip. Ok your way out and close the explorer window and
you should be good to go for sharing your files and folders in your network.
As for your my documents folder, since I don't know what you have that pointed
to as the target, I'm assuming it's pointing to a shared folder on another
machine, which could be what you're seeing. You'll have to change the target to
point to a local folder on your machine, but if that's not feasible for
security/work reasons, then you'll have to make use of the offline folders
feature to make them available when not logged on in the network.
