In the Help and support it says:

=========================
To redirect My Documents to the home directory
Open a Group Policy object that is linked to the site,
domain, or organizational unit that contains the users
whose My Documents folders you want to redirect.
In the console tree, double-click Folder Redirection to
display My Documents.

Where?

policy name Policy
User Configuration
Windows Settings
Folder Redirection
My Documents

=========================

HOWEVER:
when I go to the Group Policy Window and from that to User
Configuration - Windows Settings, then I DON'T see any
folder named "Folder Redirection". Does anyone have any
idea how that can be changed? I really would like to
redirect "My Documents" to a more sensible partition than
C:/.

.
How about if you just go to the windows start button on
the desktop and where it says My Documents, right click
and go to properties, then click on the big 'Move' button
and choose where you want it to go...worked for me...
