All of the sudden, I am getting red x's in every project file I open. I have
previously been able to open these with no problem. I have not moved a
single file. If I right-click on the red x and search for the file, it says
it can't be found. I can acutally pull up the picture it's looking for,
click "open", and it still tells me it can't be found and it's right there in
the search box! This is happening on every single project file I have. None
of them work and they have all worked in the past. I haven't changed a
single thing. What do I do??????????

that means the source files have been deleted or moved. you can right or
double click the red X I believe and find the file again. or move the files
back to where you had them. its a good idea to make a folder and keep all
pics and clips in that you use so they will always be there

The files are in exactly the same place they have always been. In fact, I
can pull up the file it's searching for and MM still won't open it. If you
notice in my original post, I mentioned that I had never moved any files.
Recently, I when I created a MM project, and saved it as a movie file, I
chose to save it in a different format (I chose High-Quality Video (large)).
Since then, all of my files have changed to AVI files. Even things on my
desktop that I haven't looked at in months now have a different icon (it used
to have a Windows Media File icon). Is this because I changed the way I have
been saving these project or did this happen with Windows Update or
something. All of the file types have changed all of the sudden.

A different icon instead of the Media Player icon doesn't mean the file
types have changed but that a different program is now set up to view that
particular file type.
To fix this:
Right click the file using Windows Explorer.
Move the arrow to "Open With".
Click "Choose a Program".
Put an X in the box labeled "Always use the selected program...".
Double Click Media Player.
Media Player will now be the default player for that particular file type
and the icon will once again be the Media Player icon.
