Recording time in Outlook?

I am a CPA and am trying to replace my DayTimer that I have used for 25 years
to do 2 things:
1. Set appointments for the future
2. Record time spent on client tasks so I can bill the client.

I can see in Outlook how to use the calendar to set future appointments.
But I cannot see how I would record time and write notes of what I did in the
calendar. Can I do that? If yes, how?
