Recording from Records to MP3 to CD/DVDs

I have old records (the old pieces of round black plastic that look like
pizza with grooves in them)
that I want to transfer to CD/DVD.
I neglected to do that to some much older records with my grandfather
singing and they turned to dust.
Now I want to save records that were made in high school with my kids
playing in various bands,
such as my daughter on piccolo accompanied by the UCLA Marching Band.

I have a record player hooked to my sound card, I can play a record and hear
it on my speakers.
Now my problem is: How do I record the sound into a file (MP3?) so I can
write it to a CD or DVD?

I have WMP, iTunes but they seem to have no way to record the sound input.
I have WinXP SP2, and I have a sound card that is based on Creative SB Live
(WDM).
Windows has a "Sound Recorder" but it only records for 60 seconds. I need
several hours.
What software can I use to capture the line-in input port and put it in a
file and at the same time listen to it?

As advised by Dennis, I purchased the Microsoft Plus! Digital Media Edition
(DME).
It seems to be doing the job of recording LP disks to WMA files.
I am able to put the WMA files onto Audio CDs which play in my car's CD
player.
But should I be converting them to MP3 files?
I don't know when I would want MP3 vs WMA.
The DME package includes a "Plus! Audio Converter" which has an MP3 option.
It goes through the motions of converting the WMA's to MP3's but after done
I get the error message:
"The file cannot be converted because it uses an unrecognized codec."
The error message is not in the DME troubleshooting list.
It is not clear if the complaint is about the codec used to create the WMA's
or
the MP3 codec that I want it converted to.
My computer was made by Dell and all the audio is as installed by XP Pro.
My Device Manager list of audio codecs includes:
Windows Media Audio Codec
Fraunhofer IIS MPEG Layer-3 Codec

Any suggestions as to how I can get these to be MP3?
I am about to begin converting about 100 LP's and want to make sure
I get them into the most compatible form as possible for general CD playing.
(These are all uncopyrighted records of high school band music.)
