I have an e-mail sitting in my tray which has a read
receipt on it. I don't want the sender to get any
notification - deletion or reading of the mail.

Since I'm on an Exchange server, the moment I open the
mail it's going to send something anyway and I don't think
working offline then deleting it will do any good
whatsoever.

I have for now moved the e-mail into my personal file (a
PST file on my drive). Even deleting the mail from here
will cause a problem, because it will still send a receipt
out. However, if I were to move out anything I wanted
from this file, then close outlook and delete the PST
file... would a read receipt still be sent?! I can't
afford to take any chances with this so if anyone has a
100% guaranteed answer I'll be most happy!!

Your solution works but why that difficult?

Set Outlook to prompt you for a read receipt; Tools-> Option-> tab
Preferences-> button E-mail Options...-> button Tracking Options.

Also note that when a delivery receipt has been requested and the mailserver
supported this the sender already nows that you've received the mail.

Unfortunately that's only good for internet traffic, as my
mail is on an Exchange server the option not send a
receipt is grayed out by default

This is a setting by your administrator then. Nothing you can do about it
accept for asking him/her to remove this policy.
