Is the following feasible (practical)?

I am running Vista Ultimate. I would like to implement the hardware RAID
function on my motherboard. If I make a disk image of my hard drive, install
additional hard drives, enable the RAID function, and restore the disk image
to my new hard drives, will it work? Or will I have to install Vista from
scratch after implementing RAID, and then restore the disk image?

My RAID controller supports mirroring, striping and mirroring + striping.

Before you create the disk image you have to enable the RAID controller and
install the drivers in your Vista installation, then it should work, I've
done it numerous times, going both to RAID and from it.
