what is the bare minimum of protocols/components needed to get a simple
local network going (using dhcp for ease of use) ?

Bare minimum is TCP/IP. That should allow Internet access and webbrowsing. If you want file sharing you'll need Client for
Microsoft Networks, File and Printer Sharing for Microsoft Networks and Netbios over TCP/IP
