I updated from ME to XP. I've dragged applications to the Quick Launch
section but only 3 display to the left of the right double arrows. I have
about 7 that I would like to permanently display. How can I do this? If not,
can I show have the three I use most frequently always displayed? Thanks.

Right-click on the taskbar.
Unlock the taskbar.
Drag the handles for the toolbars to resize them.

Right click on the Taskbar and click "Lock the Taskbar" to remove the
check next to that item. With the taskbar unlocked you can resize the
individual toolbars to your liking. Once you have them as you want,
right click the taskbar and select "Lock the Taskbar" to lock things in
place.

The Quick Launch Bar is resizable. Drag the handle at the end of
it to the right to make it larger.

If it won't move, it may be locked. In that case, right click on
it and uncheck "Lock the taskbar," then try again.

If not, can I show have the three I use most frequently always

Yes, you can also drag the shortcuts within it to change their
order.

You may also want to consider dragging the Quick Launch bar off
the Task Bar entirely and putting it on another side of the
screen, where you will have more room for QL shortcuts without
taking up Task Bar space. Although by default the Quick launch
Bar resides on the Task Bar, it is not the Task Bar itself, and
can be dragged off it and placed on another side of the screen.
