I'm installing into a case with front USB adapters and I'm just wondering
why do the cables included with the case have 2 sets of ground plug per
adapter when the board only has space for one?

I believe that if you study the pinouts in your manual, you'll discover that
each set of pins includes a ground. The "extra" pin is labeled "NC" in my
manual.
The four pins you need to connect are:
USB+5V
USB_P(port number)-
USB_P(port number)+
GND (ground)

Hope this helps.

It does help, and I understand the pin layout... but I was just wondering
why the cables supplied with the case have the following:

USB+5V
USB_P(port number)-
USB_P(port number)+
GND (ground)
GND2 (ground)

Why do they have a GND2 if there ins't a pin for it on the board? Should I
just ignore the second ground?

My Antec case front USB wiring has 2 each of
USB+5V
USB_P(port number)-
USB_P(port number)+
GND (ground)
and one connector marked NC. I used the two sets of the four above and
didn't connect NC.
My front USB ports work perfectly, so I'd say ignore it.
YMMV, of course, as I don't know what kind of case you have.
