Quality reduced when making movie

I recently bought a mid-range digital camcorder and am having trouble making
good quality movies. When I capture the video and play it, it looks good and
sounds good. When I attempt to make a movie it changes to more grainy version
and the audio is also of a less quality than the captured video version. What
is going on here? Does the quality of the video automatically reduce when
making a movie?
 
With all the options I am confused as to what quality choice I should take to
save my files. I want the best possible.... what would that be?
 
If you're going down the path of burning DVDs, then DV-AVI is the best
choice..... if it's for computer-based viewing then High quality video
(large) is about the best one on the list, but it'll depend on who else you
want to send it to and how you'll get it to them.

OK, so what if I want to send it as an e-mail attachment... anything special
I need to know? (By the way, you have been very helpful... thanks!).
 
My rule of thumb for email attachments is about 2 MB per minute of video,
and knowing the email size limits.... like my Charter account just changed
from a 20 MB limit per email to 10. Some limits are much lower, and some
people don't keep their mailboxes clean so emails to them might bounce if
it's close to the limit.

get a purchased iTune into a Movie Maker project.... you can't import them
directly.
