Qs related to time/date functions

Hi,

I have two questions:

1. In order to get the current time I used the function NOW
(), the problem is that the cell keeps on getting updated.
my question is: how do I prevent this and keep the
original time?

2. I would like to have the function being activated when
the user 'touches' the cell and not force him/her to grab
it in order it to work. Is there a way of doing it?
