Purpose of anonymous account

Why the anonymous account on 2000 AD, what process use this, and is
it a security risk, or will I break anything if I disable?

Which account are you talking about? The accounts give a description of
what they are for. If IIS is installed that account is probably the account
that is used for anonymous access to web pages - IUSR_computername. Yes it
can be disabled if you do not use it. If you have IIS installed, as it is by
default, and are not using it you may want to remove it or at least disable
the related services such as www, smtp, and ftp. --- Steve

It's a function of IIS. If you don't run IIS, you can uninstall IIS
and delete the anonymous user account and the web apps account
(IUSR_{Machinename} and IWAM_{Machinename})
