I have several projects that have different end dates, but all use the same
template of tasks leading up to the end date. Can I use the calendar in
outlook to see all the deadlines on one calendar?

How many weeks do they cover? Outlook's month view covers only 6 weeks max.
If these are tasks, you'll need to create a Day/Week/Month view for the
task folder.
